Veggie Lentil Soup


Veggie lentil Soup



Makes: 4-6 servings
Prep: 15 minutes
Cooking time: 35-45 minutes



Ingredients:
  • 1 Tablespoon oil
  • 1 medium carrot
  • 1 celery stalk
  • 1/2 an onion
  • 1 small potato
  • 3/4 cup dried red lentils
  • 1 can whole tomatoes
  • 3-4 cups Veggie broth or water
  • 1 teaspoon crushed cumin seeds
  • a large handful of spinach
  • Lime juice

Garnish: Cumin & lime yogurt
  • 1/4 cup plain krema yogurt, or full fat plain yogurt
  • zest of one lime 
  • half a lime juiced, or to taste
  • 2 teaspoons crushed cumin seed
  • salt and pepper
Method:
  1. In a medium pot, heat oil and add diced onion, celery, and carrots. Saute 5 minutes and season with salt and pepper. Add lentils, tomatoes, and water/veggie broth. If you want a thicker soup, hold back on the liquid, if you want it thinner, add the full amount. 
  2. Once soup is simmering add some chopped up potato, and toasted cumin seed. Simmer for 30 minutes, or until your veggies are tender, stirring occasionally.
  3. Once soup is cooked to your liking, stir in a handful of spinach and a squeeze of lime juice. 
Serve soup with cumin and lime spiced yogurt.
