Veggie lentil Soup

Ingredients:
- 1 Tablespoon oil
- 1 medium carrot
- 1 celery stalk
- 1/2 an onion
- 1 small potato
- 3/4 cup dried red lentils
- 1 can whole tomatoes
- 3-4 cups Veggie broth or water
- 1 teaspoon crushed cumin seeds
- a large handful of spinach
- Lime juice
Garnish: Cumin & lime yogurt
- 1/4 cup plain krema yogurt, or full fat plain yogurt
- zest of one lime
- half a lime juiced, or to taste
- 2 teaspoons crushed cumin seed
- salt and pepper
Method:
- In a medium pot, heat oil and add diced onion, celery, and carrots. Saute 5 minutes and season with salt and pepper. Add lentils, tomatoes, and water/veggie broth. If you want a thicker soup, hold back on the liquid, if you want it thinner, add the full amount.
- Once soup is simmering add some chopped up potato, and toasted cumin seed. Simmer for 30 minutes, or until your veggies are tender, stirring occasionally.
- Once soup is cooked to your liking, stir in a handful of spinach and a squeeze of lime juice.
Serve soup with cumin and lime spiced yogurt.
