Crème Brûlée



Ingredients:


  • 4 Egg yolks
  • 1 Cup full fat cream
  • 1/4 Cup milk
  • 2 Tablespoons sugar
  • 1 small pinch or a grating of nutmeg and cinnamon 

Makes: 4-6 servings, depend on size of ramekins
Oven temperature: 300 degrees
Prep time: 5 minutes
Baking time: 20 Minutes
Total time: 25-30 Minutes

Method:
  1. Slowly heat milk and cream in sauce pan, on medium heat. Add in spices.
  2. Separate yolks from whites and add to a medium bowl, set aside whites for another use. Whisk in one tablespoon sugar. Reserve rest of sugar for topping. 
  3. Remove cream mixture just before it boils, slowly whisk into yolk mixture. 
  4. Pour mixture through a fine mesh sieve into ramekins. Using your blow torch, carefully pop any bubbles on surface of mixture.
  5. Place in a baking dish, large enough for boiling water to come a third of the way up the sides of the ramekins.
  6. Place on the middle rack, in preheated oven. Slowly pour boiling water from kettle into baking dish.

  7. Bake for 18-20 minutes, depending on your oven. Check for a slight jiggle and surface should look set when ready. 
  8. Remove from water bath and cool on counter for one hour before covering and moving to the refrigerator until cooled completely.




When ready to serve, add enough sugar to evenly coat surface (depends on size of ramekins) and torch until all sugar is brûléed to your liking. Enjoy!
